Amazing Bagel Bread

The topping

freshly grated Parmesan or Asiago cheese

Instructions
- In a stand mixer, combine warm water, honey, yeast, salt, and 2 cups of flour.
- Mix until combined, then gradually add more flour until the dough forms a soft ball.
- Knead the dough for 5 minutes and let it rest for 10-15 minutes.
- Divide the dough into two pieces and shape each into a loaf.
- Place the loaves in greased loaf pans and let them rise for 45 minutes to an hour.
- Boil water in a large pot, adding honey and baking soda to the water.
- Carefully transfer each loaf into the boiling water for about 1 minute on each side.
- Place the boiled loaves back into the pans, slash the tops, and brush with beaten egg.
- Sprinkle cheese on top and bake in a preheated oven at 350°F for 40-45 minutes.
- Let the bread cool in the pans for 15-20 minutes before transferring to a cooling rack.
