Ingredients

The Dough

  • 1 tablespoon maple syrup or barley malt syrup
  • 1 pkg (¼-ounce) active dry yeast
  • cups warm water
  • 540 grams bread flour
  • 2 teaspoons sea salt

The Poaching Liquid

  • tablespoons maple syrup
  • 2 teaspoons baking soda
  • ½ tablespoon salt

The Toppings

  • 1 egg white optional
  • 1 tablespoon water
  • to taste Everything Bagel Seasoning

Instructions

  1. 1. Prepare the dough by mixing maple syrup, yeast, and warm water in a small bowl and let it foam for 5 minutes.
  2. 2. In a mixer bowl, combine flour, salt, and the yeast mixture, and mix until smooth.
  3. 3. Knead the dough by hand for a few minutes, then place it in a bowl covered with plastic wrap to rise for 60 to 90 minutes.
  4. 4. Shape the bagels by dividing the dough into 8 pieces, rolling each into a ball, and then into a rope before sealing the ends.
  5. 5. Place the shaped bagels on baking sheets, cover with plastic wrap, and refrigerate overnight.
  6. 6. The next morning, let the bagels sit at room temperature for 1 hour while preheating the oven to 450°F.
  7. 7. Prepare the poaching liquid by boiling water with maple syrup, baking soda, and salt.
  8. 8. Boil each bagel for 1 minute per side, then transfer back to the baking sheets.
  9. 9. Brush with egg wash if using, sprinkle with seasoning, and bake for 14 to 18 minutes until golden brown.
