Instructions
- 1. Prepare the dough by mixing maple syrup, yeast, and warm water in a small bowl and let it foam for 5 minutes.
- 2. In a mixer bowl, combine flour, salt, and the yeast mixture, and mix until smooth.
- 3. Knead the dough by hand for a few minutes, then place it in a bowl covered with plastic wrap to rise for 60 to 90 minutes.
- 4. Shape the bagels by dividing the dough into 8 pieces, rolling each into a ball, and then into a rope before sealing the ends.
- 5. Place the shaped bagels on baking sheets, cover with plastic wrap, and refrigerate overnight.
- 6. The next morning, let the bagels sit at room temperature for 1 hour while preheating the oven to 450°F.
- 7. Prepare the poaching liquid by boiling water with maple syrup, baking soda, and salt.
- 8. Boil each bagel for 1 minute per side, then transfer back to the baking sheets.
- 9. Brush with egg wash if using, sprinkle with seasoning, and bake for 14 to 18 minutes until golden brown.
