Foolproof Homemade Bagels

Ingredients

The dough

  • 4 cups all-purpose flour
  • 2 teaspoons Diamond Crystal kosher salt
  • 1 teaspoon instant yeast
  • 1 ¼ cups lukewarm water
  • 1 teaspoon barley malt syrup, maple syrup, or honey
  • as needed none grapeseed or olive oil

For baking

  • 1 egg whisked with 1 tablespoon water
  • as desired none various toppings (e.g., everything bagel seasoning, sesame seeds)

Instructions

  1. Combine flour, salt, and yeast in a food processor.
  2. Whisk together water and barley malt syrup, then add to the dry ingredients and blend for 60-90 seconds.
  3. Transfer the dough to a greased bowl and cover it, then refrigerate for at least 12 hours.
  4. Boil water in a large pot and add barley malt syrup.
  5. Divide the dough into 8 or 12 pieces and shape into bagels.
  6. Boil each bagel for 30 seconds on each side.
  7. Transfer boiled bagels to a towel-lined sheet pan.
  8. Brush with egg wash and add desired toppings.
  9. Bake in a preheated oven at 425°F for 20-25 minutes until golden.
