Ingredients

Dough

  • 2 ¼ teaspoon active dry yeast
  • ¾ cup warm water
  • cup butter
  • ¼ cup honey
  • ¼ cup sugar
  • 2 ½ teaspoon salt
  • 1 cup warm milk
  • 2 units eggs
  • 5 ½-6 cups bread flour
  • 1 cup raisins

Cinnamon Filling

  • ¾ cup brown sugar
  • 3 tablespoons ground cinnamon
  • teaspoon salt
  • ¼ -½ teaspoon nutmeg (optional)
  • 3-4 tablespoons melted unsalted butter (for brushing)

Instructions

  1. Combine warm water and yeast in a bowl and let it sit until dissolved.
  2. In another bowl, mix butter, honey, sugar, salt, and milk, then microwave until melted.
  3. Pour the butter mixture into the yeast mixture and stir in the eggs.
  4. Gradually add flour and raisins, mixing until a soft dough forms. Knead for 6-8 minutes if mixing by hand.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size (1½ to 2 hours).
  6. While the dough rises, prepare the cinnamon filling by mixing brown sugar, cinnamon, salt, and nutmeg in a bowl.
  7. Divide the dough in half and roll each half into a rectangle.
  8. Brush with melted butter, sprinkle with cinnamon filling, and roll up tightly.
  9. Place the rolls in greased loaf pans and let them rise for an additional 30 minutes.
  10. Bake at 350°F (175°C) for 40-45 minutes or until the internal temperature reaches 195°F to 200°F.
  11. Remove from the oven, cool on wire racks, slice, and serve.
