Cinnamon Raisin Bread

Ingredients

  • 1 cup whole wheat flour
  • 2 ¼ cups bread flour
  • 2 Tbsp brown sugar
  • 1 ¼ tsp salt
  • ¾ Tbsp instant yeast
  • 1/2 cup raisins
  • 1 Tbsp cinnamon
  • 1 ¼ cups warm water

Instructions

  1. Combine the flours, brown sugar, salt, yeast, and raisins in a large pot or bowl and mix well.
  2. Add warm water and stir until a cohesive dough forms, adding more water if necessary.
  3. Cover the bowl loosely and let the dough rest for 2 hours at room temperature until it doubles in size.
  4. Turn the dough out onto a floured surface and knead it a couple of times to prevent sticking.
  5. Shape the dough into a rectangle, sprinkle with cinnamon (and optional brown sugar), and roll it up.
  6. Place the rolled dough in a greased bread pan and let it rise for 1.5 hours.
  7. Preheat the oven to 425 degrees Fahrenheit, brush the top of the dough with water, and bake for about 30 minutes until golden brown.
  8. Cool the bread on a wire rack before slicing.
