Cinnamon Raisin Bread

Instructions
- Combine the flours, brown sugar, salt, yeast, and raisins in a large pot or bowl and mix well.
- Add warm water and stir until a cohesive dough forms, adding more water if necessary.
- Cover the bowl loosely and let the dough rest for 2 hours at room temperature until it doubles in size.
- Turn the dough out onto a floured surface and knead it a couple of times to prevent sticking.
- Shape the dough into a rectangle, sprinkle with cinnamon (and optional brown sugar), and roll it up.
- Place the rolled dough in a greased bread pan and let it rise for 1.5 hours.
- Preheat the oven to 425 degrees Fahrenheit, brush the top of the dough with water, and bake for about 30 minutes until golden brown.
- Cool the bread on a wire rack before slicing.
