Ingredients

  • 1 cup whole wheat flour
  • 2 ¼ cups all-purpose flour
  • 2 Tbsp brown sugar
  • 1 ¼ tsp salt
  • ¾ Tbsp instant or bread machine yeast
  • 1 Tbsp cinnamon
  • 1 tsp ground ginger, dry
  • ½ tsp ground cloves
  • ½ cup raisins
  • approx 1 ½ cups warm water

Instructions

  1. Combine all dry ingredients in a large bowl.
  2. Add warm water gradually until a cohesive dough forms.
  3. Cover and let the dough rise at room temperature for two hours.
  4. Knead the dough lightly and shape it into a log.
  5. Place the dough in a greased bread pan and cover with a towel to rise until doubled in size (about 1-1.5 hours).
  6. Preheat the oven to 425°F.
  7. Brush the top of the loaf with water and bake for about 30 minutes until golden brown.
  8. Cool on a wire rack before slicing.
