Ingredients

The bread

  • 1 pack active dry yeast
  • ¼ cup sugar
  • 1 ¼ cups whole milk
  • ½ stick unsalted butter
  • ¾ teaspoon salt
  • 1 large egg
  • ¼ teaspoon pure vanilla extract
  • ½ orange grated zest
  • 1 pinch freshly grated nutmeg
  • 3 ¾ to 4 cups flour

The swirl

  • 1 tablespoon sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons unsweetened cocoa powder
  • 1 cup moist, plump raisins
  • 3 tablespoons unsalted butter

Instructions

  1. Activate the yeast by mixing it with a pinch of sugar and warm milk, then let it rest.
  2. In a stand mixer, combine the remaining milk, butter, and sugar, then add salt, egg, and optional ingredients.
  3. Mix in the yeast mixture and gradually add flour until a sticky dough forms.
  4. Knead the dough until smooth, then let it rise in a buttered bowl until doubled in size.
  5. Chill the dough in the freezer for 30 minutes or refrigerate overnight.
  6. Prepare the swirl mixture and butter a loaf pan.
  7. Roll out the dough, spread butter, and sprinkle the swirl mixture and raisins on top.
  8. Roll the dough tightly and place it seam side down in the pan, then let it rise again.
  9. Preheat the oven and brush the loaf with melted butter before baking.
  10. Bake until golden and hollow-sounding, then cool before slicing.
