Chipotle Peach Salsa

Ingredients

  • 1 cup peaches, diced (drained if using canned peaches)
  • ½ cup sweet onion or red onion, chopped
  • 1 cup cherry tomatoes, diced
  • 1 to 2 pieces chipotles in adobo sauce (canned), diced
  • 2 tablespoons honey or maple syrup
  • ½ teaspoon kosher salt
  • to taste fresh diced cilantro
  • to taste fresh lime juice

Instructions

  1. Combine the diced peaches, onion, and tomatoes in a large non-reactive bowl.
  2. Stir in one diced chipotle pepper, a small amount of adobo sauce, honey, salt, chopped cilantro, and a splash of lime juice.
  3. Adjust salt and pepper to taste.
  4. Chill the salsa in the refrigerator for at least 30 minutes before serving.
  5. Store any leftovers in an airtight container in the fridge for up to 4 days.
