Chipotle Peach Salsa

Instructions
- Combine the diced peaches, onion, and tomatoes in a large non-reactive bowl.
- Stir in one diced chipotle pepper, a small amount of adobo sauce, honey, salt, chopped cilantro, and a splash of lime juice.
- Adjust salt and pepper to taste.
- Chill the salsa in the refrigerator for at least 30 minutes before serving.
- Store any leftovers in an airtight container in the fridge for up to 4 days.
