Ingredients

The fruit filling

  • 3 cups fresh or frozen strawberries, halved or quartered

  • ¼ teaspoon sea salt
  • ¼ cup honey
  • 2 tablespoons salted butter, melted
  • to taste whipped cream for serving

The biscuits

  • 2 cups all-purpose flour
  • teaspoons baking powder
  • 8 tablespoons cold salted butter, cubed
  • ½ cup buttermilk
  • ¼ cup honey
  • to taste coarse sugar for sprinkling (optional)

Instructions

  1. Preheat the oven to 375°F and prepare a skillet or pie plate with butter.
  2. Combine strawberries, rhubarb, coconut sugar, lemon zest, vanilla, and sea salt in the skillet.
  3. In a separate bowl, mix flour and baking powder, then incorporate the cubed butter until crumbly.
  4. Stir in buttermilk and honey until just combined.
  5. Drop or shape the biscuit dough onto the fruit mixture in the skillet.
  6. Sprinkle with coarse sugar if desired.
  7. Bake for 35-40 minutes until bubbling and golden.
  8. Mix honey with melted butter and serve the cobbler warm with whipped cream and honey butter.
