Instructions
- 1. Preheat the oven to 375°F.
- 2. In a medium bowl, combine strawberries and sugar, then pour into a baking dish.
- 3. In a small bowl, whisk together flour, baking powder, and salt.
- 4. In a medium bowl, cream butter and sugar until pale and fluffy, about 5 minutes.
- 5. Beat in the egg and vanilla extract.
- 6. Gradually add the flour mixture, beating well after each addition.
- 7. Drop rounded tablespoons of batter over the strawberry mixture.
- 8. Bake for 35 to 40 minutes until the topping is golden brown and the filling is bubbly.
- 9. Cool for 10 minutes before serving, optionally with ice cream.
