Ingredients

The filling

  • 2 pounds fresh strawberries, hulled and sliced
  • 3 tablespoons granulated sugar

The topping

  • cup all-purpose flour
  • ¼ teaspoon baking powder
  • 1 pinch salt
  • ½ cup butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • to taste vanilla ice cream (optional)

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. In a medium bowl, combine strawberries and sugar, then pour into a baking dish.
  3. 3. In a small bowl, whisk together flour, baking powder, and salt.
  4. 4. In a medium bowl, cream butter and sugar until pale and fluffy, about 5 minutes.
  5. 5. Beat in the egg and vanilla extract.
  6. 6. Gradually add the flour mixture, beating well after each addition.
  7. 7. Drop rounded tablespoons of batter over the strawberry mixture.
  8. 8. Bake for 35 to 40 minutes until the topping is golden brown and the filling is bubbly.
  9. 9. Cool for 10 minutes before serving, optionally with ice cream.
