Instructions
- Preheat the oven to 350°F (177°C) and grease a 9x13-inch baking pan.
- In a large bowl, gently mix the berries, sugar, cornstarch, lemon juice, and vanilla extract, then spread the mixture evenly in the prepared pan.
- In another bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut the cold butter into the flour mixture until it resembles coarse crumbs, then mix in the buttermilk until just combined.
- Flatten sections of the biscuit dough and place them over the berry mixture.
- Brush the top with buttermilk and sprinkle with coarse sugar.
- Bake for 45-55 minutes until the topping is golden brown and cooked through.
- Cool for 5 minutes before serving warm with ice cream or whipped cream.
