Ingredients

Filling

  • ½ cup sugar
  • 1 tablespoon cornstarch
  • a pinch salt
  • 6 cups fresh blueberries
  • 1 zest lemon
  • ½ juice lemon

Biscuit Topping

  • 1 cup unbleached all-purpose flour
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter
  • cup buttermilk
  • ½ teaspoon vanilla extract
  • 2 teaspoons milk for brushing
  • 2 teaspoons turbinado sugar

Serving

  • to taste vanilla ice cream or lightly sweetened whipped cream

Instructions

  1. Preheat the oven to 375°F and adjust the oven rack to the lower-middle position.
  2. In a large bowl, mix sugar, cornstarch, and salt for the filling, then add blueberries, lemon zest, and lemon juice.
  3. Transfer the berry mixture to a pie plate and bake for about 25 minutes until bubbling.
  4. In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt for the biscuit topping.
  5. Cut the butter into the dry mixture until incorporated, then add buttermilk and vanilla, mixing until combined.
  6. Form the biscuit mixture into pieces and drop them onto the hot berry filling.
  7. Brush the biscuits with milk and sprinkle with turbinado sugar.
  8. Increase the oven temperature to 425°F and bake for 15 to 18 minutes until the biscuits are golden brown.
  9. Let the cobbler cool for 20 minutes before serving.
