Instructions
- Preheat the oven to 375°F and adjust the oven rack to the lower-middle position.
- In a large bowl, mix sugar, cornstarch, and salt for the filling, then add blueberries, lemon zest, and lemon juice.
- Transfer the berry mixture to a pie plate and bake for about 25 minutes until bubbling.
- In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt for the biscuit topping.
- Cut the butter into the dry mixture until incorporated, then add buttermilk and vanilla, mixing until combined.
- Form the biscuit mixture into pieces and drop them onto the hot berry filling.
- Brush the biscuits with milk and sprinkle with turbinado sugar.
- Increase the oven temperature to 425°F and bake for 15 to 18 minutes until the biscuits are golden brown.
- Let the cobbler cool for 20 minutes before serving.
