Ingredients

The filling

  • 3 cups fresh blueberries

The topping

  • cup all-purpose flour
  • ¼ teaspoon baking powder
  • 1 pinch salt
  • ½ cup butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • to taste optional vanilla ice cream

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, combine blueberries, orange juice, and sugar, then pour into a baking dish.
  3. In a small bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, cream butter and sugar until pale and fluffy.
  5. Beat in the egg and vanilla extract.
  6. Gradually fold in the flour mixture, adding it in thirds.
  7. Drop rounded tablespoons of batter over the blueberry mixture.
  8. Bake for 35 to 40 minutes until the topping is golden brown and filling is bubbly.
  9. Cool for 10 minutes before serving, optionally with ice cream.
