Instructions
- Preheat the oven to 375°F and spray a 9x13 baking dish with cooking spray.
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
- In a mixer, cream the butter, sugar, and lemon zest until smooth. Add the egg and vanilla, mixing until combined.
- Gradually add half of the buttermilk and half of the flour mixture, then the rest of the buttermilk and flour, mixing until just combined.
- Place the mixed berries in the baking dish, adding lemon zest and fresh lemon juice. Sprinkle with sugar and cornstarch, stirring to combine.
- Drop spoonfuls of the cobbler dough onto the berry mixture and sprinkle with turbinado sugar.
- Bake for about 45 minutes until the berries are bubbling and the dough is golden brown. Let cool for 5-10 minutes before serving.
