Instructions
- Preheat the oven to 425ºF.
- Zest the lemon and set aside the zest.
- In a bowl, mix the thawed berries with sugar, cornstarch, ½ tsp of lemon zest, and 1 Tbsp of lemon juice.
- Pour the berry mixture into a small casserole dish.
- In another bowl, combine flour, baking powder, sugar, salt, and ½ tsp of lemon zest.
- Cut the cold butter into the flour mixture until it resembles damp sand.
- Add milk and stir until a slightly sticky dough forms.
- Drop the biscuit dough onto the berries in small pieces.
- Bake for 20-25 minutes until the topping is golden brown and the berries are bubbling.
- Serve warm, optionally topped with ice cream or whipped cream.
