Ingredients

The berry layer

  • 12 oz frozen mixed berries, thawed
  • ¼ cup sugar
  • Tbsp cornstarch
  • 1 fresh lemon

The biscuit topping

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ cup sugar
  • tsp salt
  • 4 Tbsp cold butter
  • 5 Tbsp milk

Instructions

  1. Preheat the oven to 425ºF.
  2. Zest the lemon and set aside the zest.
  3. In a bowl, mix the thawed berries with sugar, cornstarch, ½ tsp of lemon zest, and 1 Tbsp of lemon juice.
  4. Pour the berry mixture into a small casserole dish.
  5. In another bowl, combine flour, baking powder, sugar, salt, and ½ tsp of lemon zest.
  6. Cut the cold butter into the flour mixture until it resembles damp sand.
  7. Add milk and stir until a slightly sticky dough forms.
  8. Drop the biscuit dough onto the berries in small pieces.
  9. Bake for 20-25 minutes until the topping is golden brown and the berries are bubbling.
  10. Serve warm, optionally topped with ice cream or whipped cream.
