Ingredients

The filling

  • 3 pounds fresh peaches, peeled and sliced

  • 3 tablespoons granulated sugar

The topping

  • cup all-purpose flour
  • ¼ teaspoon baking powder
  • pinch salt
  • ½ cup butter, softened
  • ½ cup granulated sugar
  • 1 egg
  • ½ teaspoon vanilla extract
  • to serve vanilla ice cream (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, combine peaches, orange juice, and sugar, then pour into a baking dish.
  3. In a small bowl, whisk together flour, baking powder, and salt.
  4. In another bowl, cream together butter and sugar until pale and fluffy.
  5. Beat in the egg and vanilla extract.
  6. Gradually add the flour mixture, beating well after each addition.
  7. Drop rounded tablespoons of batter over the peach mixture.
  8. Bake for 35 to 40 minutes until the topping is golden brown and the filling is bubbly.
  9. Cool for 10 minutes before serving, optionally with ice cream.
