Ingredients

The filling

  • 2 pounds yellow peaches
  • ¼ cup brown sugar
  • 2 tablespoons granulated sugar
  • ½ lemon juice
  • 1 teaspoon vanilla extract
  • a pinch kosher salt
  • 2 tablespoons corn starch or tapioca flour

The topping

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ¾ cup whole milk
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla paste or 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a baking dish.
  2. In a large bowl, combine sliced peaches with brown sugar, granulated sugar, lemon juice, vanilla extract, and corn starch or tapioca flour, then toss to combine.
  3. Transfer the peach mixture to the prepared baking dish.
  4. In another bowl, whisk together flour, baking powder, salt, and sugar, then add milk, melted butter, and vanilla, mixing until combined.
  5. Pour the batter over the peach filling in the baking dish.
  6. Bake for 50 to 55 minutes until the topping is golden brown and the fruit is bubbling.
  7. Serve warm, preferably with vanilla ice cream.
