Instructions
- Preheat the oven to 350°F and prepare a baking dish.
- In a large bowl, combine sliced peaches with brown sugar, granulated sugar, lemon juice, vanilla extract, and corn starch or tapioca flour, then toss to combine.
- Transfer the peach mixture to the prepared baking dish.
- In another bowl, whisk together flour, baking powder, salt, and sugar, then add milk, melted butter, and vanilla, mixing until combined.
- Pour the batter over the peach filling in the baking dish.
- Bake for 50 to 55 minutes until the topping is golden brown and the fruit is bubbling.
- Serve warm, preferably with vanilla ice cream.
