Ingredients

The fruit

  • 6 large or 7 medium peaches, thinly sliced
  • 1 ½ teaspoons fresh lemon juice

The topping

  • ¾ cup all-purpose flour
  • ¼ cup cane sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract

For serving

  • to taste vanilla ice cream

Instructions

  1. Preheat the oven to 400°F and grease a 9x13-inch baking dish.
  2. Layer the sliced peaches in the bottom of the baking dish and drizzle with lemon juice.
  3. In a medium bowl, mix the flour, sugar, cinnamon, baking soda, and salt.
  4. Add the melted coconut oil and vanilla to the dry ingredients and combine until crumbly.
  5. Sprinkle the topping over the peaches and bake for about 30 minutes until lightly browned and juicy.
  6. Serve warm with vanilla ice cream.
