Easy Peach Cobbler

Instructions
- Preheat the oven to 400°F and grease a 9x13-inch baking dish.
- Layer the sliced peaches in the bottom of the baking dish and drizzle with lemon juice.
- In a medium bowl, mix the flour, sugar, cinnamon, baking soda, and salt.
- Add the melted coconut oil and vanilla to the dry ingredients and combine until crumbly.
- Sprinkle the topping over the peaches and bake for about 30 minutes until lightly browned and juicy.
- Serve warm with vanilla ice cream.
