Ingredients

The crust

  • cups all-purpose flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter
  • ¾ cup buttermilk
  • ½ cup pecans, chopped
  • to taste heavy cream or egg wash
  • to serve vanilla ice cream

The peach filling

  • 8 to 10 peaches, peeled, cored, and sliced
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • 1-1½ tablespoons cornstarch
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Instructions

  1. Preheat the oven to 350℉ (175℃) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Cut the butter into the flour mixture until it resembles coarse meal, then slowly add the buttermilk and mix until combined.
  4. In a saucepan, combine the sliced peaches, granulated sugar, brown sugar, salt, cornstarch, cinnamon, and nutmeg, and cook over medium heat for 6-8 minutes until the sugar dissolves and juices are released.
  5. Transfer the peach mixture to the prepared baking pan and smooth it out.
  6. Drop the dough by handfuls over the peaches, leaving some gaps.
  7. Brush the top with heavy cream or egg wash and sprinkle with chopped pecans.
  8. Bake for 40-45 minutes until the topping is golden brown and the filling is bubbly.
  9. Let cool for a few minutes before serving with vanilla ice cream.
