Ingredients

Filling

  • 2 cups chopped rhubarb
  • 4 cups mixed cherries and berries
  • 1 tbsp arrowroot starch
  • 1 tbsp maple syrup

Cobbler Topping

  • ½ cup cornmeal
  • ½ cup rolled oats
  • ½ cup gluten-free flour
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 2 tbsp melted coconut oil
  • 3 tbsp maple syrup
  • 2 tbsp coconut milk or other milk
  • 1 large egg

Instructions

  1. Preheat the oven to 350 degrees.
  2. Mix the filling ingredients and pour into an 8×8 inch pan.
  3. In a small bowl, mix the dry ingredients for the topping and set aside.
  4. In a large bowl, mix the wet ingredients for the topping.
  5. Combine the dry ingredients with the wet ingredients until well mixed.
  6. Evenly cover the fruit with the cobbler topping.
  7. Bake for 35 to 40 minutes until the topping is cooked through.
  8. Enjoy warm or at room temperature.
