Ingredients

The filling

  • 3 large peaches, skinned and cut into ¼” slices
  • ½ cup fresh raspberries
  • 1 tablespoon juice of lemon
  • teaspoon ground cinnamon
  • 1 tablespoon arrowroot

The crumble

  • cup rolled oats
  • cup white whole wheat flour
  • ¼ cup pecans, chopped
  • cup brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons butter, melted

Optional topping

  • 1 scoop vanilla bean ice cream

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. In a small bowl, combine peaches, ground cinnamon, arrowroot, and lemon juice, then toss to coat.
  3. 3. Gently add raspberries to the peach mixture and toss.
  4. 4. Transfer the raspberry peach mixture to a small sprayed 4x4 baking dish.
  5. 5. In another bowl, mix rolled oats, white whole wheat flour, pecans, brown sugar, ground cinnamon, ground nutmeg, and melted butter until combined.
  6. 6. Sprinkle the crumble mixture on top of the raspberry peach mixture.
  7. 7. Bake for 30 minutes.
