Ingredients

The fruit

  • 2 ½ cups sweet cherries, pitted
  • 1 tablespoon cornstarch
  • ¼ cup fine-grain natural cane sugar

The cobbler topping

  • 1 ¼ cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • cup fine-grain natural cane sugar (or brown sugar)
  • ¼ teaspoon salt
  • ¼-½ cup toasted nuts (optional)
  • 1 large egg
  • ½ cup buttermilk
  • 3 tablespoons butter, melted and cooled

Instructions

  1. Preheat the oven to 425°F and butter a 9-10 inch round tart pan.
  2. In a small bowl, toss the cherries with cornstarch and sugar, then set aside.
  3. In a large bowl, mix flour, baking powder, sugar, salt, and nuts.
  4. In a separate bowl, whisk together the egg, buttermilk, and melted butter.
  5. Combine the wet and dry ingredients until just mixed.
  6. Pour the cherries into the prepared pan and drop dollops of the dough on top.
  7. Bake for 15-20 minutes until the top is golden and cooked through.
