Instructions
- Preheat the oven to 375°F.
- In a medium bowl, combine cherries, orange juice, and sugar, then pour into a baking dish.
- In a small bowl, whisk together flour, baking powder, and salt.
- In another medium bowl, cream together butter and sugar until pale and fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the flour mixture, mixing well after each addition.
- Drop rounded tablespoons of batter over the cherry mixture.
- Bake for 35 to 40 minutes until the topping is golden brown and the filling is bubbly.
- Cool for 10 minutes before serving, optionally with ice cream.
