Ingredients

The cherry filling

  • 4 cups fresh or frozen cherries, pitted
  • cup coconut sugar
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons vanilla extract
  • ¼ teaspoon sea salt
  • 1 tablespoon bourbon (optional)
  • to taste none powdered sugar for dusting

The biscuits

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • 6 tablespoons cold salted butter, cubed
  • ½ cup buttermilk
  • ¼ cup honey
  • 1 vanilla bean seeds removed

Instructions

  1. Preheat the oven to 375°F.
  2. Lightly grease an 8-9 inch pie plate.
  3. Combine cherries, coconut sugar, lemon juice, vanilla, sea salt, and bourbon in the pie plate and toss well.
  4. In a large bowl, mix flour and baking powder.
  5. Cut in the butter until the mixture resembles coarse crumbs.
  6. Whisk buttermilk and honey together, then stir into the flour mixture until just combined.
  7. Drop batter onto the cherries using a 1/4 cup measure or shape into rounds and place on top.
  8. Bake for 40-45 minutes until the cherries are bubbling and biscuits are golden.
  9. Dust with powdered sugar and serve warm, optionally with ice cream.
