Instructions
- Preheat the oven to 375°F.
- Lightly grease an 8-9 inch pie plate.
- Combine cherries, coconut sugar, lemon juice, vanilla, sea salt, and bourbon in the pie plate and toss well.
- In a large bowl, mix flour and baking powder.
- Cut in the butter until the mixture resembles coarse crumbs.
- Whisk buttermilk and honey together, then stir into the flour mixture until just combined.
- Drop batter onto the cherries using a 1/4 cup measure or shape into rounds and place on top.
- Bake for 40-45 minutes until the cherries are bubbling and biscuits are golden.
- Dust with powdered sugar and serve warm, optionally with ice cream.
