Ingredients

Cherry Filling

  • 2 ½ to 3 pounds pitted sweet cherries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon almond extract (optional)

Biscuit Topping

  • 2 cups all-purpose flour
  • cup granulated sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup salted butter (cold or frozen)
  • ¾ to 1 cup semisweet chocolate chunks or chips
  • ½ cup buttermilk
  • 1 large egg
  • Coarse sugar (like turbinado for sprinkling, optional)

Instructions

  1. Preheat the oven to 375°F and grease a 9x13-inch baking dish.
  2. In a bowl, combine cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract.
  3. Spread the cherry filling in the prepared baking dish.
  4. In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  5. Grate the butter into the dry ingredients and mix to coat the butter.
  6. Add chocolate chunks and mix well.
  7. In a separate bowl, whisk buttermilk and egg, then add to the dry mixture and combine until just mixed.
  8. Turn the dough onto a floured surface, roll to about ½-inch thick, and cut into 12 pieces.
  9. Place the biscuit pieces over the cherry filling and sprinkle with coarse sugar if desired.
  10. Bake for 45-50 minutes until biscuits are golden and filling is bubbling.
  11. Let cool for 30 minutes before serving warm with ice cream.
