Ingredients

The salad

  • 2.5 oz. arugula
  • ½ medium red onion, diced
  • ½ cup fresh blueberries
  • 12 oz. cherry tomatoes
  • cup dried cranberries
  • cup goat cheese crumbles
  • ¼ cup pine nuts

The dressing

  • 3 tablespoons balsamic vinaigrette

Instructions

  1. Prepare the balsamic vinaigrette and set aside.
  2. Toast the pine nuts in a small skillet over medium heat for 4-5 minutes until golden brown, then remove from heat and let cool.
  3. In a large bowl, combine arugula, red onion, blueberries, cherry tomatoes, dried cranberries, goat cheese, and toasted pine nuts.
  4. Drizzle the dressing over the salad, adding one tablespoon at a time until the desired amount is reached.
