The dressing

balsamic vinaigrette
Instructions
- Prepare the balsamic vinaigrette and set aside.
- Toast the pine nuts in a small skillet over medium heat for 4-5 minutes until golden brown, then remove from heat and let cool.
- In a large bowl, combine arugula, red onion, blueberries, cherry tomatoes, dried cranberries, goat cheese, and toasted pine nuts.
- Drizzle the dressing over the salad, adding one tablespoon at a time until the desired amount is reached.
