Ingredients

  • 2 pounds Yukon gold potatoes
  • 8 slices thick bacon
  • ½ large yellow onion
  • cup apple cider vinegar
  • 1 teaspoon salt
  • ½ teaspoon coarsely-ground black pepper
  • ¼ cup chopped fresh parsley leaves

Instructions

  1. 1. Boil the potatoes in salted water until tender, about 15–20 minutes.
  2. 2. While the potatoes cook, fry the bacon until crispy and then sauté the onions in the bacon grease until translucent.
  3. 3. Once the potatoes are cooked, drain and cut them into cubes.
  4. 4. In a bowl, combine the potatoes with the bacon, onions, vinegar, salt, and pepper, and toss well.
  5. 5. Serve warm, garnished with fresh parsley, or chill and serve cold.
