Ingredients

The salad

  • 2 pounds baby red potatoes
  • to taste salt and pepper
  • 12 ounces bacon, coarsely chopped
  • ½ cup onion, finely chopped

The dressing

  • cup apple cider vinegar
  • 2 tablespoons sugar
  • 1 tablespoon Dijon mustard

The garnish

  • 3 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped

Instructions

  1. 1. Boil a large pot of salted water and add the potatoes, cooking until tender.
  2. 2. Drain the potatoes and let them cool for 5 minutes before cutting them in half.
  3. 3. In a pan, cook the bacon over medium heat until crispy, then add the onion and cook until softened.
  4. 4. Remove the bacon and onion, leaving some grease in the pan.
  5. 5. Add vinegar, sugar, mustard, salt, and pepper to the grease and simmer for 1 minute.
  6. 6. Place the potatoes in a bowl and pour the dressing over them, tossing to coat.
  7. 7. Stir in the bacon, onions, parsley, and chives, then serve immediately.
