German Potato Salad

The salad

baby red potatoes

bacon, coarsely chopped

onion, finely chopped
The dressing

apple cider vinegar

sugar

Dijon mustard
The garnish

fresh chives, chopped
Instructions
- 1. Boil a large pot of salted water and add the potatoes, cooking until tender.
- 2. Drain the potatoes and let them cool for 5 minutes before cutting them in half.
- 3. In a pan, cook the bacon over medium heat until crispy, then add the onion and cook until softened.
- 4. Remove the bacon and onion, leaving some grease in the pan.
- 5. Add vinegar, sugar, mustard, salt, and pepper to the grease and simmer for 1 minute.
- 6. Place the potatoes in a bowl and pour the dressing over them, tossing to coat.
- 7. Stir in the bacon, onions, parsley, and chives, then serve immediately.
