Ingredients

  • 2 pounds red potatoes
  • ½ pound bacon, cut into 1-inch thick pieces
  • 1 cup onion, diced
  • 2 teaspoons garlic, minced
  • 1/3 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 3 tablespoons granulated sugar
  • ½ teaspoon salt
  • to taste freshly ground black pepper
  • 1 green onion, diced
  • ¼ cup fresh parsley, chopped
  • to taste pepper flakes (optional)

Instructions

  1. Boil the potatoes in salted water for 12-14 minutes until tender.
  2. Drain the potatoes and let them cool, then cut into ½-inch thick slices.
  3. Cook the bacon in a skillet until crispy, then set aside.
  4. Remove excess bacon fat from the skillet, leaving 2-3 tablespoons, and sauté onion and garlic until translucent.
  5. Whisk together apple cider vinegar, Dijon mustard, sugar, salt, and pepper, then add to the skillet and simmer for 2 minutes.
  6. Toss in the sliced potatoes and green onions, cooking for another 2 minutes.
  7. Serve the potato salad topped with crispy bacon and fresh parsley.
