German Potato Salad

Instructions
- Boil the potatoes in salted water for 12-14 minutes until tender.
- Drain the potatoes and let them cool, then cut into ½-inch thick slices.
- Cook the bacon in a skillet until crispy, then set aside.
- Remove excess bacon fat from the skillet, leaving 2-3 tablespoons, and sauté onion and garlic until translucent.
- Whisk together apple cider vinegar, Dijon mustard, sugar, salt, and pepper, then add to the skillet and simmer for 2 minutes.
- Toss in the sliced potatoes and green onions, cooking for another 2 minutes.
- Serve the potato salad topped with crispy bacon and fresh parsley.
