Ingredients

The base

  • 3 strips bacon
  • 1 ½ cups diced yellow onion
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 4 cloves garlic

The meat

  • 1 lb grass fed ground beef
  • ½ lb ground Italian sausage

The liquids and seasonings

  • ¼ teaspoon salt
  • cup red wine or beef broth
  • 28 oz can San Marzano whole tomatoes
  • 8 oz can tomato sauce, no salt added
  • 3 tablespoons tomato paste

The herbs

  • 1 teaspoon parsley
  • 2 teaspoons oregano
  • 2 teaspoons basil

The finishing touches

  • 1 tablespoon balsamic vinegar
  • cup grated parmesan

Instructions

  1. 1. Heat a large dutch oven to medium-high heat and sauté the bacon until crispy.
  2. 2. Add onions, celery, carrots, and garlic, cooking until the onions are translucent.
  3. 3. Incorporate the ground beef and sausage, cooking until browned while breaking it up.
  4. 4. Deglaze the pan with red wine, cooking for 1-2 minutes.
  5. 5. Stir in the whole tomatoes, tomato sauce, tomato paste, parsley, oregano, and basil, then simmer for 20-25 minutes.
  6. 6. Finally, add balsamic vinegar and parmesan cheese, stir, and simmer for another 5 minutes before serving.
