Grilled Shrimp and Grits

Ingredients

  • 1 ½ lbs shrimp, deveined and shells removed
  • 1 lb andouille sausage, chopped into ¼” pieces
  • 1 8-oz bag red, yellow, green mini peppers
  • 2 tbsp old bay seasoning
  • 2 cups grits
  • 1 qt organic reduced sodium chicken stock
  • 2 cups water
  • cup whole milk
  • 1 tbsp butter
  • 1 tbsp sea salt
  • 1 tbsp fresh ground pepper
  • 1 tbsp smoked paprika
  • 1 cup cheddar, grated
  • to taste chopped parsley, for garnish
  • to taste Crystal Hot sauce

Instructions

  1. Toss shrimp with olive oil and old bay seasoning in a bowl.
  2. Boil chicken broth and water in a large pot, then gradually add grits while stirring constantly.
  3. Let grits simmer for about 30 minutes, stirring occasionally.
  4. Prepare the grill for direct heat.
  5. Grill the shrimp, sausage, and peppers until cooked through, removing them as they are done.
  6. Chop the grilled shrimp, sausage, and peppers once cooled.
  7. Add milk, cheese, and butter to the grits and stir to combine, then season with salt, pepper, and smoked paprika.
  8. Ladle grits into bowls and top with shrimp, sausage, and peppers, garnishing with parsley.
  9. Serve with hot sauce and additional seasonings as desired.
