Cajun Shrimp and Grits

quick grits

unsalted butter

white sharp cheddar cheese (preferably smoked)
Instructions
- 1. Sauté bacon in a skillet until brown and crisp, then remove and set aside, leaving some drippings in the pan.
- 2. Add oil or butter to the pan, sauté shrimp seasoned with Cajun salt for 3-4 minutes, then set aside.
- 3. In the same pan, add garlic, paprika, bell pepper, parsley, and green onions, cooking for 3 minutes.
- 4. Return shrimp to the pan, add lemon juice if desired, and mix in crispy bacon, adjusting seasonings.
- 5. In a saucepan, bring water, milk, bay leaf, and salt to a boil.
- 6. Gradually whisk in grits, stirring to prevent lumps, then simmer covered until thickened.
- 7. Remove from heat, stir in butter and cheese until melted.
- 8. Serve grits topped with the Cajun shrimp mixture.
