Ingredients

The grits

  • 3 cups water
  • 3 cups milk
  • 1 teaspoon salt
  • 1 cup grits
  • cups cheddar cheese
  • 2 tablespoons butter

The shrimp

  • 1 pound shrimp
  • ¼ cup whole-wheat flour
  • 3 pieces bacon
  • cup green onions
  • 2 cloves garlic
  • to taste salt
  • to taste pepper
  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • ¼ teaspoon hot sauce

Instructions

  1. Combine water, milk, and salt in a saucepan and bring to a boil.
  2. Whisk in grits, reduce heat, and simmer until thickened, stirring occasionally.
  3. Stir in cheese and butter once grits are cooked.
  4. Prepare the shrimp by peeling and patting dry, then dredge in flour.
  5. Cook bacon in a skillet until crispy, then crumble and set aside.
  6. Sauté green onions in the bacon grease for 1-2 minutes.
  7. Add shrimp, garlic, salt, and pepper to the skillet, cooking until shrimp are pink.
  8. Add chicken broth, lemon juice, hot sauce, and bacon to the skillet, stirring until sauce thickens.
  9. Serve grits topped with shrimp and sauce, garnished with extra green onions.
