Ingredients

The Grits

  • 4 c. water
  • 1 c. grits
  • 3 Tbsp. salted butter
  • 2 c. shredded sharp cheddar cheese

The Shrimp Mixture

  • 1 lb. shrimp, peeled and deveined
  • 6 oz. regular bacon, cut into bite-sized pieces
  • 1 Tbsp. lemon juice
  • 1 tsp. lemon juice
  • 2 Tbsp. fresh chopped parsley
  • 1 c. thinly sliced green onions
  • 2 cloves garlic, minced
  • to taste Tabasco sauce

Instructions

  1. Cook the grits according to the package directions.
  2. While the grits are cooking, cook the bacon in a skillet until crispy, then transfer to a paper towel-lined plate, reserving the drippings.
  3. In the bacon drippings, cook the shrimp over medium-high heat until they start to turn pink, about 2 minutes.
  4. Add the lemon juice, garlic, green onions, parsley, and cooked bacon to the shrimp and cook for an additional 3 minutes until the shrimp are fully cooked.
  5. Once the grits are done, stir in the butter and cheese until smooth.
  6. Serve the grits in shallow bowls topped with the shrimp mixture, and enjoy.
