The Shrimp Mixture

shrimp, peeled and deveined

regular bacon, cut into bite-sized pieces

lemon juice

thinly sliced green onions

Instructions
- Cook the grits according to the package directions.
- While the grits are cooking, cook the bacon in a skillet until crispy, then transfer to a paper towel-lined plate, reserving the drippings.
- In the bacon drippings, cook the shrimp over medium-high heat until they start to turn pink, about 2 minutes.
- Add the lemon juice, garlic, green onions, parsley, and cooked bacon to the shrimp and cook for an additional 3 minutes until the shrimp are fully cooked.
- Once the grits are done, stir in the butter and cheese until smooth.
- Serve the grits in shallow bowls topped with the shrimp mixture, and enjoy.
