Ingredients

The Grits

  • cup chicken broth
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 cup stone ground grits
  • 1 cup milk
  • ½ cup shredded white cheddar cheese
  • ¼ cup shredded Parmesan reggiano cheese

The Shrimp and Gravy

  • 1 pound raw shrimp
  • 1 teaspoon Old Bay Seasoning
  • to taste salt and pepper
  • 4 slices bacon or 3 oz andouille sausage
  • ½ cup chopped white onions
  • 3 cloves garlic
  • ½ cup chicken broth
  • 1 teaspoon Cajun Seasoning
  • 1 tablespoon fresh lemon juice

Instructions

  1. Cook the grits by boiling broth, butter, and salt, then gradually stir in the grits and cook until absorbed.
  2. Remove from heat and stir in milk and shredded cheese, letting it thicken.
  3. In a skillet, fry bacon or sausage until crisp, then set aside and reserve grease.
  4. Cook seasoned shrimp in the reserved grease until cooked through, then set aside.
  5. Sauté onions and garlic in the skillet until translucent, then add broth, Cajun seasoning, and lemon juice.
  6. Combine with crumbled bacon or sausage, and serve over the grits topped with shrimp.
