Cajun Shrimp with Smoked Gouda Grits

Ingredients

The shrimp

  • ½ lb. jumbo shrimp, deveined and peeled
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon chipotle chili powder
  • 2 tablespoons unsalted butter
  • 2 tablespoons juice of half a lemon
  • 1 teaspoon diced fresh thyme
  • cup roasted red pepper, diced
  • ¼ cup green onions, diced

The grits

  • ½ cup quick cooking grits
  • 2 cups water
  • ¾ cup grated smoked gouda cheese
  • ¼ teaspoon garlic powder
  • to taste none salt

The bacon

  • 4 strips applewood smoked bacon, diced

Instructions

  1. Cook diced bacon in a skillet until crispy, then set aside.
  2. Mix spices in a bowl and coat the shrimp with the mixture.
  3. Sauté the shrimp in butter until cooked, then add lemon juice, thyme, roasted red pepper, and bacon.
  4. In another pot, boil water and whisk in the grits, cooking until thick.
  5. Stir in smoked gouda, garlic powder, and salt until cheese is melted.
  6. Serve the grits topped with the shrimp mixture.
