Pasta Carbonara

Ingredients

The pasta

  • 1 lb spaghetti or linguine
  • 8 cups water
  • 1 tsp salt

The sauce

  • 10 slices bacon, cut into ½-inch pieces
  • 4 cloves garlic, minced
  • 1 ¼ cups finely grated parmesan cheese
  • 3 large eggs
  • 1 large egg yolk
  • 1 tsp pepper
  • 1 tbsp bacon fat
  • chopped to taste fresh parsley

Instructions

  1. Simmer bacon and ½ cup of water in a skillet until the water evaporates and the bacon is crispy.
  2. Remove bacon and reserve the drippings.
  3. Sauté garlic in the same skillet until golden brown.
  4. In a bowl, combine sautéed garlic, bacon fat, eggs, egg yolk, parmesan, and pepper, and mix well.
  5. Cook spaghetti or linguine until al dente, reserving 1 cup of the cooking water.
  6. Pour hot cooking water into the egg mixture, then add to the pasta and toss to coat.
  7. Add crumbled bacon and let the pasta rest for a few minutes, tossing frequently until the sauce thickens.
  8. Serve immediately with additional parmesan and parsley.
