Pasta Carbonara

bacon, cut into ½-inch pieces

finely grated parmesan cheese

Instructions
- Simmer bacon and ½ cup of water in a skillet until the water evaporates and the bacon is crispy.
- Remove bacon and reserve the drippings.
- Sauté garlic in the same skillet until golden brown.
- In a bowl, combine sautéed garlic, bacon fat, eggs, egg yolk, parmesan, and pepper, and mix well.
- Cook spaghetti or linguine until al dente, reserving 1 cup of the cooking water.
- Pour hot cooking water into the egg mixture, then add to the pasta and toss to coat.
- Add crumbled bacon and let the pasta rest for a few minutes, tossing frequently until the sauce thickens.
- Serve immediately with additional parmesan and parsley.
