Ingredients

The pasta

  • 1 pound spaghetti
  • 1 tablespoon salt

The sauce

  • 6 slices bacon
  • 4 cloves garlic
  • 3 large eggs
  • 1 cup Parmesan cheese
  • ½ teaspoon black pepper
  • to taste salt
  • for garnish fresh parsley

Instructions

  1. Preheat the oven to 200 degrees and place a large serving bowl inside.
  2. Bring 4 quarts of water and 1 tablespoon of salt to a boil.
  3. Cook the spaghetti until al dente, about 10 minutes, reserving 1 cup of pasta water before draining.
  4. In a skillet, cook the bacon over medium heat until crispy, then add garlic and cook until fragrant.
  5. In the warm bowl, combine eggs, Parmesan cheese, and black pepper, beating with a fork.
  6. Add the drained pasta, bacon, and rendered fat to the bowl, tossing to combine.
  7. Add pasta water gradually until the sauce reaches a creamy consistency, then season with salt and pepper.
  8. Garnish with additional cheese and parsley if desired.
