Easy Spaghetti Carbonara

Ingredients

The pasta

  • 12 oz spaghetti

The sauce

  • 3 oz bacon
  • 2 cloves garlic
  • 3 large eggs
  • ¾ cup grated Parmesan
  • to taste salt
  • to taste freshly cracked pepper
  • handful fresh parsley (optional)

Instructions

  1. 1. Boil salted water in a large pot for the pasta.
  2. 2. Cut the bacon into small pieces and cook in a skillet over medium-low heat until crispy.
  3. 3. Remove the bacon and lower the heat, then sauté minced garlic in the bacon fat until fragrant.
  4. 4. In a bowl, whisk together eggs, ½ cup Parmesan, and freshly cracked pepper.
  5. 5. Cook the spaghetti in the boiling water until al dente, reserving 1 cup of pasta water before draining.
  6. 6. Add ¼ cup of reserved pasta water to the skillet and stir to dissolve browned bits.
  7. 7. Toss the drained pasta in the skillet with the bacon water.
  8. 8. Pour the egg and Parmesan mixture over the hot pasta and stir until a creamy sauce forms.
  9. 9. Add the remaining Parmesan, bacon, and more pepper, tossing to combine.
  10. 10. Adjust seasoning with salt, pepper, or Parmesan as needed, and top with parsley if desired.
