Easy Spaghetti Carbonara

Instructions
- 1. Boil salted water in a large pot for the pasta.
- 2. Cut the bacon into small pieces and cook in a skillet over medium-low heat until crispy.
- 3. Remove the bacon and lower the heat, then sauté minced garlic in the bacon fat until fragrant.
- 4. In a bowl, whisk together eggs, ½ cup Parmesan, and freshly cracked pepper.
- 5. Cook the spaghetti in the boiling water until al dente, reserving 1 cup of pasta water before draining.
- 6. Add ¼ cup of reserved pasta water to the skillet and stir to dissolve browned bits.
- 7. Toss the drained pasta in the skillet with the bacon water.
- 8. Pour the egg and Parmesan mixture over the hot pasta and stir until a creamy sauce forms.
- 9. Add the remaining Parmesan, bacon, and more pepper, tossing to combine.
- 10. Adjust seasoning with salt, pepper, or Parmesan as needed, and top with parsley if desired.
