Pasta Carbonara

Ingredients

The pasta

  • 1 pound spaghetti or other long pasta

The sauce

  • ¾ pound bacon, cut into ¼ inch pieces
  • 1 teaspoon minced garlic
  • 2 whole eggs
  • 4 egg yolks
  • 1 cup parmesan cheese plus more for garnish
  • to taste salt and pepper
  • 2 tablespoons chopped parsley

Instructions

  1. 1. Boil salted water in a pot and cook the spaghetti according to package directions, reserving ½ cup of the pasta cooking water.
  2. 2. In a large pan, cook the bacon over medium-high heat until crispy, then drain excess grease, leaving 1 tablespoon.
  3. 3. Add minced garlic to the pan and cook for an additional 30 seconds.
  4. 4. Remove ⅓ cup of cooked bacon from the pan and set aside.
  5. 5. In a medium bowl, whisk together the eggs, egg yolks, and parmesan cheese.
  6. 6. Add the cooked spaghetti to the pan with the remaining bacon and toss to coat.
  7. 7. Remove the pan from heat and pour in the egg and cheese mixture, tossing for 2-3 minutes until the sauce thickens.
  8. 8. Gradually whisk in reserved pasta water until desired sauce consistency is reached.
  9. 9. Season with salt and pepper, then top with reserved bacon, chopped parsley, and additional parmesan cheese before serving.
