Pasta Carbonara

bacon, cut into ¼ inch pieces

parmesan cheese plus more for garnish

Instructions
- 1. Boil salted water in a pot and cook the spaghetti according to package directions, reserving ½ cup of the pasta cooking water.
- 2. In a large pan, cook the bacon over medium-high heat until crispy, then drain excess grease, leaving 1 tablespoon.
- 3. Add minced garlic to the pan and cook for an additional 30 seconds.
- 4. Remove ⅓ cup of cooked bacon from the pan and set aside.
- 5. In a medium bowl, whisk together the eggs, egg yolks, and parmesan cheese.
- 6. Add the cooked spaghetti to the pan with the remaining bacon and toss to coat.
- 7. Remove the pan from heat and pour in the egg and cheese mixture, tossing for 2-3 minutes until the sauce thickens.
- 8. Gradually whisk in reserved pasta water until desired sauce consistency is reached.
- 9. Season with salt and pepper, then top with reserved bacon, chopped parsley, and additional parmesan cheese before serving.
