Instructions
- Preheat the oven to 350°F (175°C).
- Optionally spray the muffin tin with oil to prevent sticking.
- Wrap the tortillas in damp paper towels and microwave for about 2 minutes.
- Allow the tortillas to cool slightly and separate them.
- Fit the tortillas into the muffin tin by folding and pressing them down.
- Bake the tortillas for 20 minutes or until crispy.
- Add a spoonful of beans and cheese to each cup and bake for another 10 minutes.
- Let the cups cool slightly, then add your choice of toppings.
- Serve and enjoy!
