Ingredients

The taco cups

  • 12 pieces corn tortillas
  • 1 spray light spray of oil (optional)

The toppings

  • to taste Healthy Vegan Bean Dip
  • to taste Ultimate Vegan Cheese Sauce
  • to taste Guacamole
  • to taste Salsa
  • to taste Cilantro
  • to taste Green onions
  • to taste Jalapenos
  • to taste Spicy Cilantro Cream Sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Optionally spray the muffin tin with oil to prevent sticking.
  3. Wrap the tortillas in damp paper towels and microwave for about 2 minutes.
  4. Allow the tortillas to cool slightly and separate them.
  5. Fit the tortillas into the muffin tin by folding and pressing them down.
  6. Bake the tortillas for 20 minutes or until crispy.
  7. Add a spoonful of beans and cheese to each cup and bake for another 10 minutes.
  8. Let the cups cool slightly, then add your choice of toppings.
  9. Serve and enjoy!
