Ingredients

The dough

  • 1 box Simple Mills Pizza Dough
  • 2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 6 tbsp water

The toppings

  • ¾ cup chunky salsa
  • ¾ cup pepper jack cheese, shredded
  • cup vegetarian refried beans (optional)
  • 1 small tomato, diced
  • ½ cup corn
  • ¾ cup shredded romaine lettuce
  • to taste cilantro, for garnish

Instructions

  1. Preheat the oven to 350°F and grease a 12-cup muffin tin.
  2. In a large bowl, whisk together the olive oil, apple cider vinegar, and water, then add the pizza dough mix and combine until a dough forms.
  3. Roll golf-ball sized pieces of dough and press them into the muffin tin, then bake for 13 minutes.
  4. Remove from the oven and top each cup with salsa, refried beans, and cheese, then bake for an additional 10 minutes.
  5. Top with fresh tomato, corn, lettuce, and cilantro, and enjoy warm.
