Instructions
- Combine almond flour, salt, and baking soda in a food processor.
- Pulse in eggs and tomato sauce until combined.
- Add cheeses and pepperoni, then pulse until mixed.
- Line muffin cups with paper liners.
- Scoop a heaping ¼ cup of batter into each cup.
- Bake at 350°F for 25 minutes.
- Remove from oven and place 1 teaspoon of sauce on top of each muffin.
- Sprinkle cheese and pepperoni over the sauce.
- Return to oven and bake for an additional 15 minutes.
- Cool for 1 hour before serving.
