Ingredients

The muffins

  • cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • 4 large eggs
  • ¼ cup tomato sauce
  • ½ cup cheddar cheese
  • ½ cup parmesan cheese
  • 2 ounces pepperoni

Toppings

  • ¼ cup tomato sauce
  • ½ cup cheddar cheese
  • ½ cup parmesan cheese
  • 2 ounces pepperoni

Instructions

  1. Combine almond flour, salt, and baking soda in a food processor.
  2. Pulse in eggs and tomato sauce until combined.
  3. Add cheeses and pepperoni, then pulse until mixed.
  4. Line muffin cups with paper liners.
  5. Scoop a heaping ¼ cup of batter into each cup.
  6. Bake at 350°F for 25 minutes.
  7. Remove from oven and place 1 teaspoon of sauce on top of each muffin.
  8. Sprinkle cheese and pepperoni over the sauce.
  9. Return to oven and bake for an additional 15 minutes.
  10. Cool for 1 hour before serving.
