Ingredients

The Muffins

  • 1 ½ cups all-purpose or gluten-free flour
  • ½ cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1 ½ teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon fine salt
  • 4 oz pepperoni slices, finely chopped
  • ½ cup shredded mozzarella cheese or pizza blend cheese
  • ¼ cup sliced black olives
  • 2 eggs eggs
  • 1 ½ cups milk
  • ¼ cup pizza sauce

Toppings

  • additional pizza sauce
  • additional pepperoni slices
  • additional mozzarella
  • additional black olives

Instructions

  1. Preheat the oven to 375°F.
  2. Combine the dry ingredients in a bowl and add the chopped pepperoni, cheese, and black olives.
  3. In a separate bowl, whisk together the eggs, milk, and pizza sauce.
  4. Mix the wet ingredients into the dry ingredients until just incorporated.
  5. Divide the batter among 12 muffin cups.
  6. Swirl additional pizza sauce into the tops of each muffin and add extra cheese and toppings.
  7. Bake for 20-25 minutes until the centers are set and muffins are golden brown.
  8. Cool slightly before serving.
