Ingredients

The base

  • 1 package gluten free pizza dough mix (6.5 ounces or around 200 grams)
  • ⅓ to ½ cup pizza sauce or tomato sauce

The toppings

  • cup sliced/diced bell peppers or other veggies
  • as needed cup shredded cheese of choice
  • optional uncured pepperoni, cooked ground sausage, or diced chicken

For cooking

  • 1 spray non-stick cooking spray

Instructions

  1. Prepare the gluten-free pizza dough according to the package instructions and roll it out into a rectangle.
  2. Chill the rolled dough in the freezer for 10 minutes or in the fridge for 30 minutes.
  3. Preheat the oven to 425°F and grease a muffin pan with cooking spray.
  4. Cut the chilled dough into circles and place them in the muffin pan.
  5. Add a tablespoon of pizza sauce to each muffin cup, followed by veggies, protein (if using), and cheese.
  6. Bake in the preheated oven for 11-14 minutes until the dough is browned and the cheese is melted.
