Healthy Tortilla Egg Cups

Ingredients

  • 12 pieces Small Street Taco-Sized Tortillas
  • 12 pieces Eggs
  • 1 piece Tomato, finely chopped
  • 3 tablespoons Chives, finely chopped
  • 3 pieces Bacon, finely chopped
  • to taste Sea Salt
  • to taste Black Pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Place a tortilla in each cavity of a muffin tray.
  3. Crack an egg into each tortilla.
  4. Top each egg with chopped tomato, chives, pre-cooked bacon, sea salt, and black pepper.
  5. Bake for 20 minutes, or until the egg whites are set.
  6. Remove from the oven, serve, and enjoy.
