Instructions
- Preheat the oven to 350°F and spray a 12-cup nonstick muffin tin with cooking spray.
- Heat olive oil in a skillet over medium-high heat, then add ground turkey and spices, cooking until the turkey is fully cooked.
- Transfer the cooked turkey into the muffin cups and evenly distribute the diced green pepper, red pepper, and onion among the cups.
- In a bowl, whisk together eggs and milk, then pour the mixture into the muffin cups, filling them about ¾ full.
- Season with salt and pepper, and sprinkle cheese on top.
- Bake in the oven for 18-22 minutes.
