Ingredients

  • ½ lb ground turkey
  • ½ tablespoon olive oil
  • 1 tablespoon chili powder
  • teaspoon paprika
  • ½ teaspoon garlic powder
  • 1 teaspoon ground cumin
  • teaspoon salt
  • 1 large green pepper
  • 1 large red pepper
  • ½ medium onion
  • 8 large eggs
  • ¼ cup milk
  • cup cheddar cheese
  • ¼ cup fresh cilantro

Instructions

  1. Preheat the oven to 350°F and spray a 12-cup nonstick muffin tin with cooking spray.
  2. Heat olive oil in a skillet over medium-high heat, then add ground turkey and spices, cooking until the turkey is fully cooked.
  3. Transfer the cooked turkey into the muffin cups and evenly distribute the diced green pepper, red pepper, and onion among the cups.
  4. In a bowl, whisk together eggs and milk, then pour the mixture into the muffin cups, filling them about ¾ full.
  5. Season with salt and pepper, and sprinkle cheese on top.
  6. Bake in the oven for 18-22 minutes.
