Instructions
- Preheat the oven to 350ºF and prepare a muffin tin with coconut oil.
- Mix the dry ingredients in a medium bowl and set aside.
- In a large bowl, whisk together the wet ingredients, excluding the melted coconut oil.
- Gradually add the dry ingredients to the wet mixture and mix well.
- Incorporate the melted coconut oil into the batter.
- Fill each muffin cup about ¾ full with the batter.
- Bake for 20-22 minutes until done.
- Allow the muffins to cool for at least 15 minutes before glazing.
- Prepare the glaze by mixing water and powdered sugar.
- Drizzle the glaze over the cooled muffins and enjoy.
