Ingredients

Dry Ingredients

  • 1.75 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3 teaspoons ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon allspice
  • teaspoon salt
  • ½ cup chopped pecans

Wet Ingredients

  • 2 large eggs
  • ¼ cup maple syrup
  • cup molasses
  • 1 cup applesauce
  • ¼ cup almond milk, unsweetened
  • 1 teaspoon vanilla extract
  • ¼ cup coconut oil, melted

Glaze

  • 1 tablespoon water
  • ¼ cup powdered sugar

Instructions

  1. Preheat the oven to 350ºF and prepare a muffin tin with coconut oil.
  2. Mix the dry ingredients in a medium bowl and set aside.
  3. In a large bowl, whisk together the wet ingredients, excluding the melted coconut oil.
  4. Gradually add the dry ingredients to the wet mixture and mix well.
  5. Incorporate the melted coconut oil into the batter.
  6. Fill each muffin cup about ¾ full with the batter.
  7. Bake for 20-22 minutes until done.
  8. Allow the muffins to cool for at least 15 minutes before glazing.
  9. Prepare the glaze by mixing water and powdered sugar.
  10. Drizzle the glaze over the cooled muffins and enjoy.
