Ingredients

The muffins

  • ¼ cup coconut oil
  • ¾ cup plain nonfat Greek yogurt
  • ½ cup nonfat milk
  • ½ cup coconut sugar or light/dark brown sugar
  • ½ cup molasses (not blackstrap)
  • 1 large egg
  • 1 ½ cups white whole wheat flour
  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons ground ginger
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cloves
  • 1 ½ cups finely diced sweet-crisp apples

Optional topping

  • to taste sparkling or turbinado raw sugar

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin.
  2. Melt the coconut oil and let it cool.
  3. In a bowl, whisk together yogurt, milk, coconut sugar, molasses, and egg, then add the coconut oil once at room temperature.
  4. In another bowl, combine the flours, baking soda, spices, and salt, then fold in the diced apples.
  5. Mix the wet ingredients into the dry ingredients until just combined.
  6. Scoop the batter into the muffin cups and sprinkle with sugar if desired.
  7. Bake for 16 to 18 minutes until a toothpick comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack.
