Ingredients

The muffins

  • ½ cup unsweetened applesauce
  • ½ cup plain Greek yogurt
  • ½ cup dark molasses
  • ½ cup brown sugar
  • ¼ cup oil
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup milk
  • 2 ⅔ cups flour
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons ground cinnamon
  • 1 ¼ teaspoons ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon coarse salt
  • 1 tablespoon turbinado sugar (optional)

The glaze

  • ½ cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 400°F and prepare a muffin tin with liners and cooking spray.
  2. In a large bowl, mix together applesauce, Greek yogurt, molasses, brown sugar, oil, egg, and vanilla until fluffy.
  3. Gradually mix in the milk until combined.
  4. In another bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  5. Slowly combine the dry ingredients with the wet ingredients, mixing gently.
  6. Fill each muffin liner with batter and sprinkle with turbinado sugar if desired.
  7. Bake at 400°F for 5 minutes, then reduce the temperature to 350°F and bake for another 8-10 minutes until set.
  8. Let the muffins cool for 5 minutes before transferring them to a wire rack.
  9. While cooling, prepare the glaze by whisking together powdered sugar, milk, and vanilla.
  10. Drizzle the glaze over the cooled muffins.
