Instructions
- Preheat the oven to 400°F and prepare a muffin tin with liners and cooking spray.
- In a large bowl, mix together applesauce, Greek yogurt, molasses, brown sugar, oil, egg, and vanilla until fluffy.
- Gradually mix in the milk until combined.
- In another bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
- Slowly combine the dry ingredients with the wet ingredients, mixing gently.
- Fill each muffin liner with batter and sprinkle with turbinado sugar if desired.
- Bake at 400°F for 5 minutes, then reduce the temperature to 350°F and bake for another 8-10 minutes until set.
- Let the muffins cool for 5 minutes before transferring them to a wire rack.
- While cooling, prepare the glaze by whisking together powdered sugar, milk, and vanilla.
- Drizzle the glaze over the cooled muffins.
